CARACTERIZACIÓN REOLÓGICA DE PAPILLAS INFANTILES, FORMULADAS A BASE DE HARINA DE PAPAS (SOLANUM TUBEROSUM L.) DE VARIEDADES NATIVAS ECUATORIANAS, EDULCORADAS CON PULPA DE MORA (RUBUS GLAUCUS BENTH) Y TAXO (PASSIFLORA TARMINIANA COPP.)

Abstract

Cuatro formulaciones de papillas infantiles elaboradas con papa (Solanum tuberosum L.), de las variedades Yema de huevo y Santa Rosa, fueron obtenidas y mezcladas con pulpas de mora (Rubus glaucus Benth)  y taxo (Passiflora tarminiana Copp.).  Las papillas  fueron preparadas empleando una relación  2:1 agua – papilla pulverizada, determinándose sus  características reológicas en un viscosímetro rotacional, en el intervalo de temperatura 30-40°C.  Se  concluyó  que las formulaciones estudiadas poseen un comportamiento no newtoniano del tipo Casson. La temperatura influyó significativamente sobre el índice  de  consistencia (K), cuyo comportamiento se ajustó adecuadamente al modelo de Arrhenius.

 ABSTRACT

 Four baby food formulas  made from potato  flour of the varieties ‘yema de huevo’ and ‘Santa  Rosa’ mixed with blackberry  and taxo pulp were prepared and then  dehydrated. Reconstitution of the puree was  performed with a water:baby food ratio of 2:1 and then their rheological characteristics were determined using a rotational  viscometer at a temperature interval of 30-40°C.  The baby food puree exhibited  a non-newtonian behaviour (Casson) and  temperature significantly affect their consistency index,  which agrees with the Arrhenius model.
